Star chef conjures up magical dishes in front of the Eiger, Mönch and Jungfrau

Due to its strategic realignment in the catering industry, Jungfrau Railways took over the management of the Kleine Scheidegg station restaurant in the Grindelwald-Wengen ski area at the end of October 2017. On Thursday, November 30, a preview dinner with star chef Martin Bieri took place two days before the official opening.

A restaurant for meat lovers and fans of healthy eating: The star chef Martin Bieri will pamper his guests from 2 December 2017 in the newly opened Kleine Scheidegg mountain restaurant with local products that are freshly prepared each day. On Thursday, November 30, Jungfrau Railways invited guests and the media to a preview dinner. They were welcomed by CEO Urs Kessler, Jungfrau Railways' new Head of Catering Reto Mettler and star chef Martin Bieri. Swiss celebrities including Gian Simmen, Francine Jordi and Marc Trauffer were also present. Starting Saturday, 2 December 2017, the restaurant in the middle of the Grindelwald-Wengen ski area will be open around the clock.

Three restaurants, three styles
A sea of alpine flowers shines from the ceiling, in the background Jungfrau Railways adorns the oversized mural featuring the Eiger, Mönch and Jungfrau. The fur-decorated chairs invite you to linger in the alpine dream world of the Jungfraustube. Friends of the Jungfrau Region will get their money's worth in the Mönchstube, which is traditionally decorated with corner benches. Old posters from the region hang from the wooden walls. The Eigerstube takes guests back in time to the art nouveau era featuring authentic décor from the turn of the 20th century.

Smoker, BBQ and indoor greenhouse
The newly opened Kleine Scheidegg mountain restaurant awaits its guests with an uncomplicated and rustic-style kitchen, offering traditional "mountain hut" food and feel-good dishes for meat lovers and fans of healthy food alike. Every day, 36-year-old star chef Martin Bieri prepares a fresh variety of local, high-quality products. A special eye-catcher at the Mönchstube is the Alpine gardening greenhouse with fresh herbs, microgreens and sprouts, as well as the dry-aging fridge with delicacies from the Bernese Oberland and smoked meat specialities. Oven-fresh cakes are also on offer, as is a smoker on the terrace that makes our own pastrami with meat originating from the Bernese Oberland. Burgers are served with chips featuring Martin Bieri's herb salt and home-made ketchup. White polenta is a surprise at over 2000 metres above sea level as well as the Thai salad, which exudes a taste of the Far East.

Strategic reorientation
Due to its strategic realignment in the catering industry, Jungfrau Railways took over the management of the Kleine Scheidegg station restaurant in the Grindelwald-Wengen ski area at the end of October 2017. In the medium term, the Jungfrau Railway Group seeks to develop in the direction of an integrated leisure and service company. In the Jungfraujoch – Top of Europe business segment, the catering will be gradually integrated by the end of 2019 with the independent restaurant companies on Kleine Scheidegg and Jungfraujoch. This constitutes a central component in the value chain of tourist excursions.
